As a meat eater and a proponent of sustainability, it can sometimes be difficult to reconcile my love of meat and my desire to limit my impact on our environment. The farm, growing our own food and raising animals ethically has allowed me to have my meat and eat it too. However, I am always in search of ways to decrease (not eliminate) our meat consumption. Finding delicious alternative protein sources is key!
Here is one that I really like because its delicious and “easy peasy lemon squeezy” (as my 4 year old would say). These chickpeas are delicious as a snack or a great addition to a salad.

Roasted Chickpeas

Ingredients
- 1 can chickpeas
- 2 tablespoons cajun spice mix (or any of your favourite store bought spice mixes)
- 2 to 3 tablespoons avocado oil (or other oil of your preference)
- Salt and pepper to taste
Instructions
- Heat your oven to 400 degrees.
- Drain, rinse and dry the chickpeas using a clean tea towel.
- Place the chickpeas in a bowl and toss with the spice mix, salt, pepper and oil.
- Place the chickpeas on a cookie sheet lined with parchment paper or a silicon baking mat. Bake in the oven for 25 to 30 minutes giving them a shake half way through.
- Let them cool. Eat as a snack or add to your favourite salad or soup.
